When we drink coffee at home or in the down-town restaurant or hotel we give little thought to the painstaking processes which were necessary to perfect the product so as to provide the fine drink we enjoy. One of the most important processes is the maintenance of the cup testing department. It is here that the various samples of green coffee are actually roasted in miniature gas roasters, then ground and boiling water poured on the coffee just as it is actually prepared in the home. Through this method the tester is enabled to make selection of just the types of coffees required in his particular blends, and such testing of course must be done by real experts.
This “cupping” as it is called requires keen sense of taste and smell as each variety of coffee has its own particular flavor and the cup tester must be able to distinguish the characteristics of each type and select only those which fit into his particular needs.
In the picture, Mr. Menger is shown tasting-test coffee which will later be roasted in the large modern plant at the H & H Coffee Company located at 601 Delaware Street, then properly ground for the particular type of coffee brewing which their customers may require, and then finally packed in air-tight containers such as cellulose wrapped paper bags, vacuum cans or vacuum glass jars.
The Hoffmann-Hayman Coffee Company has also built up a wonderful reputation for their hotel and cafe blends and they again exercise maintenance of uniformity of blend. The company however through their modern facilities and 30 odd years of experience have been able to perfect their blends and maintain them to such a degree that their business is gradually expanding in this field.
Good coffees continues to be the favorite drink in American homes and is destined to become still more popular through the powerful advertising campaign which has just been inaugurated in the United States by the producing countries such as Brazil, Cuba, Venezuela, Columbia, Nicaragua and El Salvador whose slogan is “Where there’s life there’s coffee.” This educational campaign will no doubt do much toward effecting the misconception which the public has heard in the past.
